Tasty Tuesday is back!

PUMPKIN CAKE ROLL

Beat three eggs for five minutes
Add 1 cup sugar and 2/3 cup pumpkin
Mix in 3/4 cup flour
1 T baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

Mix ingredients together then spread in cookie sheet. Bake at 375 degrees for 10-15 minutes. Spread tea towel out and sprinkle with powdered sugar, then roll cake in tea towel. Chill.

Filling:
1 cup powdered sugar
3 oz cream cheese
4 T butter
1 1/2 tsp vanilla

Unroll cake and spread filling. Reroll and chill. You can sprinkle more powdered sugar over top when serving if desired. Enjoy!

  1. I am nuts about pumpkin rolls! How come mine always sticks to the tea towel? I've had to switch to parchment paper.
