Tasty Tuesday is TOO Yummy this week!!

Aunt Katy, Uncle Rick and I made homemade caramel popcorn and now I'm going to share this fabulously sinful recipe with the rest of you! Print it and make it! You'll love me and hate me for it all at the same time!! Guaranteed!!

**Fill a disposable turkey roasting pan with fresh-popped hot air popcorn. Add a handful or two of peanuts if desired**

Caramel Popcorn

2 cups brown sugar

1/2 cup white corn syrup

1 cup butter

1/4 tsp cream of tartar

1 tsp salt

1 tsp baking soda

Cook first five ingredients to hard ball stage (260 degrees). Stir constantly. Remove from heat. Stir in baking soda. Pour over popcorn. Mix well. (There were two of us with large spoons working hard to make sure all the popcorn was covered) Bake for one hour at 200 degrees...make sure you mix the popcorn every 15 minutes while baking. Pour out on wax paper. Break popcorn apart and let cool. Store in air tight container.

THE BEST PUMPKIN PIE EVER!!

I usually try to post recipes on Tuesdays but this is sooo yummy, I don't want it to be too late!I always use Libby's Pumpkin, however, I don't follow the recipe exact. This is how hubby's grandma made her pies and they were the absolute BEST!!
2 unbaked pie crusts (No, I don't make my own...it was a flop!)
3/4 cup granulated sugar
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
I leave out the cloves!
1/2 cup brown sugar (the recipe doesn't call for this)
3 eggs (the recipe calls for two)
1 1/2 cups (12oz can) Evaporated milk
Then follow the directions on the can!
Believe me...you won't regret it if you follow this recipe.
Now, I have some pumpkin pie to go eat...and Oh My Goodness...there's egg nog too! We'll worry about our weight later!

Tasty Tuesday is back!

PUMPKIN CAKE ROLL

Beat three eggs for five minutes
Add 1 cup sugar and 2/3 cup pumpkin
Mix in 3/4 cup flour
1 T baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

Mix ingredients together then spread in cookie sheet. Bake at 375 degrees for 10-15 minutes. Spread tea towel out and sprinkle with powdered sugar, then roll cake in tea towel. Chill.

Filling:
1 cup powdered sugar
3 oz cream cheese
4 T butter
1 1/2 tsp vanilla

Unroll cake and spread filling. Reroll and chill. You can sprinkle more powdered sugar over top when serving if desired. Enjoy!

Tasty Tuesday: Chicken & Rice

This is one of those super easy, put all the ingredients in one pan and forget about it meals!

Chicken & Rice

1 can cream of chicken
1 can cream of mushroom
1 can cream of celery
1 pkg. onion soup mix
1 cup water
3 cups rice (yes, I use Minute Rice)
4 chicken breasts

Bake at 350 degrees for 45 minutes

Tasty Tuesday: Scalloped Potatoes

I kind of missed Monday this week...but I'm thinking Tasty Tuesday sounds better! Scalloped Potatoes
1/2 stick butter

2-1/2 lbs. potatoes

1-1/2 tsp salt

2 T ground pepper

8 oz Cheddar cheese

8 oz Monterey Jack cheese
2 cups milk
Mix sliced potatoes, salt & pepper. In baking dish add layer of potatoes, 2 tsp flour, 1 T butter, then 1/2 cup cheese. Repeat layers ending with cheese. Pour milk over the top then bake until golden brown.
Bake at 350 degrees for approximately 1 hour
I picked this up somewhere--I think that this is an Emeril recipe!

Monday Recipe: Creamy Chicken Cheese Puffs

Creamy Chicken Cheese Puffs

1 cup shredded cheddar
1 can cream of chicken
1 cup milk
2 cups chopped chicken
1 can crescent rolls

Mix milk, soup, 1/4 cup cheese. Heat until cheese melted. Mix remainder of cheese and chicken into mixture. Unroll crescent rolls and separate triangles. Put one scoop of chicken mix on each triangle and roll closed. Bake 20 minutes at 350 degrees. You can heat the remainder of the soup mix mixture and pour on top when serving...but much messier that way and not so kid friendly!

Monday Recipe-Lasanga Pie

My mom used to make this when I was a kid and I loved it! If you happen to have leftovers, this is much better reheated in the oven instead of the microwave. Wish I had a picture of how pretty this when it comes out of the oven!!

Lasagna Pie

1 can Pillsbury croissant

1/2 lb hamburger
1/2 lb sausage
1/2 c chopped onion
1/2 teaspoon oregano
sale & pepper to taste
1T parsley
1 can tomato paste (6oz)

1 cup cottage cheese
1/4 cup parmesan
1 egg

Mix first set of ingredients in one bowl. Mix cheese and egg mixture in second bowl. Roll out croissant and "pinch and spread" until large enough for 9-in pie pan--be sure that you have enough excess that you will be able to fold up and close the pie. Place in pie pan (this will be your crust). Begin layering meat mixture, cheese mixture, meat mixture, etc. You now have the option for some sort of cheese on top if desired. Then bring excess dough over to cover pie. Bake at 375 degrees until croissant is a golden brown.

Monday Recipe: Old Settlers Baked Beans

I tried to find a good picture to go along with this recipe...but I do believe they taste a ton better than they look! I wish I could capture the wonderful aroma and share it with everyone instead!

Old Settlers Baked Beans

3/4 cup Brown Sugar
1/4 cup Ketchup
2 T Mustard
2 T Molasses
3/4 cup White Sugar
1/4 cup BBQ Sauce (any kind)
1/2 tsp Chili Powder
1/2 tsp Salt
1 can Kidney Beans (15 oz)
1 can Butter Beans (15 oz)
1 can Pork & Beans (15 oz)
1 lb Ground Chuck
1/2 lb Chopped Bacon or Sausage
1 Chopped Onion

Cook ground chuck, bacon or sausage and onion until done. Drain and set aside.

Mix all other ingredients in large bowl. DO NOT drain beans. Add meat and bake at 350 degrees for one hour or in a crock-pot for six hours

Homemade Taco Seasoning & Homemade Taco Sauce

One of the meals that we really enjoy in our house is Taco Salad. After browning my hamburger I always add a can of drained pinto or kidney beans (is that weird?). One of my girlfriends has recently turned me onto homemade seasoning vs. packaged. I made this the last time we had Taco Salad and it was pretty good.

1 tsp chili powder
1 tsp paprika
3/4 tsp salt
3/4 tsp minced onion
1/2-1 tsp cumin
1/4 tsp cayenne pepper
1/4 garlic powder
1/4 tsp sugar
1/8 tsp pepper

My mom always used Nacho Doritos for the chips in the salad and it is sooo yummy that way! Of course, all the regular toppings like tomatoes, olives, cheese, sour cream, and red onion (another weird thing my family does) are also added. Mom also had the ultimate best Taco Salad Sauce of all times and I'm gonna share it today!

1/2 cup ketchup
1/4 cup vinegar
1/4 cup sugar
1/2 cup oil

Mix vigorously (I usually use a shaker mixer). Be sure to chill and enjoy!
Sounds really simple but it truly is fabulous! Be sure to just pour a little on the top because it's easy to overdo.

Rich & Easy Clam Chowder

Fall is in the air...which will too quickly be followed by winter. Thought I'd post this yummy recipe. Best of all, it's one of those wonderful slow cooker recipes that you put on and get to forget about.

Rich & Easy Clam Chowder

3 10 3/4 oz cans cream of potato soup
2 10 3/4 oz cans New England clam chowder
1/2 cup butter
1 small onion, diced
1 pint half-and-half
2 6 1/2 oz cans clams, minced

Combine all ingredients in slow cooker.
Cook on low 2-4 hours

Casseroles

I love casseroles! It's probably because you can't get much more fattening and they're just too easy. Whether you're a SAHM, a working mom, a single mom...or not a mom at all, that's just too irresistible! I thought I'd share a couple of casserole that are my favorites.

Firecracker Casserole (click on link for printer friendly page)
1 lb ground beef
1 med chopped onion
2-3 tsp cumin (I prefer more)
2 cans Ranch style beans

Brown beef with onions. After drained, add cumin and beans. Pour into baking pan.
Add layer of flour tortillas. Then add layer of your favorite cheese...Mexican cheese, colby-jack, cheddar...

Mix small can of cream of mushroom soup with can of Rotel. Pour over top.

Bake one hour at 350 degrees. I usually add a little more cheese to the top about 15 minutes before it's ready.


Chicken tetrazzini Casserole (click on link for printer friendly page)

Approx. 18oz cooked spaghetti noodles
can of chicken broth
1 small can cream of mushroom
1 small can cream of chicken
cheddar cheese
shredded chicken ( You can use canned chicken if in a hurry. I usually boil three breasts and shred the meat.)
1/4 cup milk
salt and pepper to taste
1 small onion chopped

Add all ingredients together in pan. Bake at 375 degrees, 45 mins-1 hour

Chocolate Chippers

My first posted recipe...I'm gonna start with a classic. But honestly, they are the best chocolate chip cookies I've ever eaten in my entire life! They are a beautiful golden color and sooo chewy. I also love this particular recipe because it only makes about a dozen good sized cookies. I will also mention that I always bake them on my baking stone. I love it because it's about impossible to burn them.

Chocolate Chippers:
1/2 cup shortening
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 tsp vanilla

1 cup flour
3/4 tsp salt
1/2 tsp baking soda


Mix the first ingredients together. Add dry ingredients (mixed together also) slowly. Then add chocolate chips. Bake 10-12 minutes at 375 degrees
