PUMPKIN CAKE ROLL
Beat three eggs for five minutes
Add 1 cup sugar and 2/3 cup pumpkin
Mix in 3/4 cup flour
1 T baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
Mix ingredients together then spread in cookie sheet. Bake at 375 degrees for 10-15 minutes. Spread tea towel out and sprinkle with powdered sugar, then roll cake in tea towel. Chill.
Filling:
1 cup powdered sugar
3 oz cream cheese
4 T butter
1 1/2 tsp vanilla
Unroll cake and spread filling. Reroll and chill. You can sprinkle more powdered sugar over top when serving if desired. Enjoy!

ReplyDeleteI am nuts about pumpkin rolls! How come mine always sticks to the tea towel? I've had to switch to parchment paper.
